These tuna patties are light and healthy containing  potato, lemon zest and canned tuna. If you do not like tuna you could replace it with yellow cheese and make yummy potato croquettes.

Baking these croquettes makes the cooking process easier and the dish lighter and healthier. If you do choose to fry them keep in mind that leaving the croquettes in the refrigerator for at least an hour keeps them in one peace in the frying process.

INGREDIENTS:

2 medium sized potatoes

approximately 400 gr caned tuna in water, drained, separated by hand

zest of 1 lemon

1/2 cup fresh parsley, chopped

1/2 teaspoon salt

1/4 teaspoon white pepper

1 egg

1 tablespoon sunflower seeds, cleaned and unsalted

and

1/2 cup breadcrumbs for coating of the croquettes

Wash and peel the potatoes. Cook them, mash them and leave the to get cold. Add tuna and lemon zest. Sunflower seeds, salt, pepper and the egg, mix well with a fork or by hand. Make small balls or finger like shapes coat them with breadcrumbs.

Place the tuna croquettes in a baking pan covered with baking paper, drizzle with olive oil and bake in a preheated oven for 30 minutes on 200 degrees Celsius or 392F.

Serve cold with lemon mayonnaise or tomato sauce.
