Meatballs with Olives (Soutzukakia)

Meatballs with Olives or Soutzukakia or Greek meatballs can be considered as one of the most convinient  dinner ideas. This dish can be served as a part or appetizers bufe. Handmade
meatballs will be appreciated as this recipe includes green olives that gives that different approach to any meatball recipe with tomatoe sauce.

INGREDIENTS:

For the meatballs:

500 gr. ground beef

2 cloves garlic

1/2 teaspoon cumin powder

3 slices of dried bread, or 1 cup bread crumbs

1/2 cup water or red wine

for the sauce:

3 tomatoes red and juicy, grated

1/2 cup green olives, diced

1 teaspoon sugar

1/2 teaspoon salt

1/2 teaspoon sweet red paprika or hot if you prefer

4 tablespoons olive oil

plus :

1 tablespoon fresh butter

2 tablespoons olive oil

Simmer the olives in a small pan for 3 minutes. Drain them and put them aside.

Pour the wine or the water in a bowl qnd add the dried bread slices, or bread crumbs in it. Let it soak well then drain it with your hands and add it to the bowl with the meat.

Smash or puree the garlic and add it to the meat together with the cumin and salt.

Knead the meat well. Cut it in 4 peaces, and from each of this parts make 3 meatballs. Try to  shape them long as small sausages. You will form 12 long meatballs. cover them and refrigerate for 15 minutes.

Take a medium sauce pan and pour all ingredients for the sauce inside. Simmer for 10 minutes.

In the meantime put the 1 table spoon of butter together with 2 tablespoons of olive oil in a large skillet. Fry the meatballs. Add the tomato sauce cover the skillet and let it simmer for 20 minutes on a medium heat.
