Marinated Grill Vegetables
Marinated grilled vegatables are going to make sure that vegatarians are going to have good time at your bbg party. Meat is not the only thing we grill although that is the first thing we think of when we plan a barbecue. Vegetables taste very good when grilled but, if you have time to marinate them you will be surprised.
INGREDIENTS:
Eggplants
Red and green peppers
Zucchini
and any other vegetable you enjoy eating like mushrooms, carrots…
Clean the vegetables of your choice and cut them in thin slices.
For the vegetable marinade you will need:
2 cups ilive oil
5 cloves garlic, samshed and cut
5 tablespoons fresh basil, chopped
6 tablespoons fresh parsley, chopped
2 tablespoons fresh mint, chopped
Put all vegetables in the barbecue marinade and leave them to sit there for 5 hours (always in the refrigerator).
Grill the vegetables.
