Zucchini Bread
I believe that zucchini bread is a must have in a bread basket when you and your family or friends are having breakfast. Bread is one of the basic needs in every day basis and this is one tasty and quick bread and I am sure you that are going to prepare it often.
Its ingredients like fresh zucchini, Parmesan cheese and spices are giving it a crispy crust and soft filled with flavors inside.
It is mixed with baking powder instead of yeast so it is quick and easy to make. Just mix well the ingredients and bake it in a mold or prepare zucchini muffins for parties and dinner with friends.
INGREDIENTS:
150 gr. white, all purpose flour
150 gr. wholegrain wheat flour
2 tablespoons baking powder
1/2 teaspoon salt
1 teaspoon whole cumin seeds
1 teaspoon whole flax seeds
200 gr. fresh zucchini, grated
150 ml. sunflower seed oil
2 whole eggs, beaten
45 ml. milk, warm not hot
50 gr. Parmesan cheese, grated
and
3 tablespoons sesame seeds
salt and black or white pepper to sprinkle on top
Step one: Prepare the bread pan (9 x 23 cm; 4 x 9 inches) and oil it. Turn on the oven on 180 degrees Celsius (356F).
Step two: Cut the Parmesan cheese, grate it and divide it on two halves.
Step three: Sieve the flours and baking powder (in order to get more air in the flour and to also make baking powder evenly spreads in the flour). Mix everything in a bowl using one half of the Parmesan cheese and pour the mix in the bread pan.
Step four: Sprinkle the sesame seeds, salt and pepper on top
Step five: Bake for 45 minutes, and check if it baked with a toothpick or knife the way you check if the cake is baked.
