Goat meat has the bast taste when cooked slowly, so Goat casserole is one of the best ways to prepare it. This recipe is actuallybaked goat meat together with baked potatoes. One of the best ways to serve baked goat is with yogurt, a yogurt omelet in this case.
You can prepare this casserole with lamb or beef, just keep on mind that goat meat has less fat and less calories compared with other red meat. It also is a good source of iron and potassium.
Because it contains less fat compared to other red meat types, it has to be cooked long and slowly on low temperature and with moisture. In order to make it soft you can marinate it during the night, or cook it in milk for half an hour.
INGREDIENTS:
for the Goat Casserole:
1 kg. goat meat, cut in large chunks (lamb meat is also acceptable)
5-6 potatoes,cleaned and sliced
3 carrots, cleaned and sliced
3 tablespoons all purpose flour
2 tablespoons olive oil
1/2 cup white wine
1 teaspoon dry rosemary leaves
1 teaspoon dry mint leaves or 1 tablespoon fresh mint leaves, chopped
1 teaspoon salt
for the Yogurt Omelet:
500 gr. yogurt
5 eggs
2 cloves garlic, chopped
Step one: Put the flour in a plate and roll every peace of the goat meat in it. Fry the peaces of meat in a skillet until it gets golden color on each side.
Step two: Take a cast iron pot, or any other pot that can be put in the oven, place the goat meat inside, add the potatoes, carrots, sprinkle with rosemary leaves and mint, add salt and mix well with your hands. Now add the wine, and half of the oil that is left in the skillet where you fried the meat. Cover the pot and bake on 180 degrees Celsius for two hours.
Step three: Take a baking pan sprinkle the chopped garlic on the bottom then pour the second half of the oil from the skillet. Slightly beat the eggs in a bowl add the yogurt, mix well and pour in the pan. Bake for 30 minutes.
Serve the baked goat with baked potatoes and carrots on a plate. Place one peace of the yogurt omelet and some green salad on the side.Enjoy!
