GOAT MEAT CASSEROLE
A dish that is low in fat and rich in proteins. You can replace goat meat with lamb and accompany it with pistachio pesto sauce.
INGREDIENTS:
1 kg. goat meat with bones
1 liter fresh milk
1 kg. potatoes
1 tablespoon dried rosemary
2 cloves garlic sliced
juice of 1 lemon
1 teaspoon salt
3 tablespoons oil
Cook the goat meat in the milk for 15 minutes on medium heat. Please do not cover the pan cause the milk is going to turn your stove into a mess.
While meat is boiling pill of potatoes cut them and put them in a bowl with water so they will not turn black.
Take the meat out of the pan and make a few cuts with the knife that you create a small pocket where you place a slice of garlic.
Take a casserole with a cover. If not you can close the casserole with kitchen foil for this way the goat meat that is has no fat is going to be baked slowly and it will keep its juices.
Place meat, potatoes, pour 1/2 cup water, 3 spoons oil, sprinkle rosemary leaves. salt ,black pepper if you desire. Stir all together pout lemon juice on the top. Cover the pan and cook for 2 hours on 180 degrees Celsius.
