Puttanesca Sauce with tuna fish

Puttanesca Sauce with tuna fish

Puttanesca is the most famous Italian sauce that got the name from the ladies of the night. Anchovy is the fish used in the original recipe but tuna fish gives a very good taste especially if you plan to serve this tomato sauce with pasta.

3 tablespoons olive oil

4 tablespoons onion, finely chopped

2 cloves garlic, chopped

2 tablespoons canned tuna fish

2 tablespoons sweet red wine

10 big green olives, pitted and quartered

3 tablespoons canned capers, rinsed

1 can or 1 and a half cup (270 gr) chopped tomatoes with juice

1 tablespoon tomato paste

white pepper

a pinch of sugar

Warm a heavy bottom skillet and add the oil. Add onions, garlic, tuna fish and pepper and fry for 5 minutes or until onions are tender and fish melts.

Add wine, fry for 2 minutes until alcohol evaporates and all flavors mix well.

Add tomatoes, olives, capers, tomato paste, sugar cover the skillet and simmer for 15 minutes.

Serve with tagliatelle, sprinkle with fresh parsley chopped, or grated Pamigiano Reggiano if you like.
