Puttanesca sauce is a must try from the list of italian pasta sauces.

Anchovy fillets are responsible for that special taste of this very popular Italian sauce for pasta that got the name from ladies of the night. Smoked herring is a fish you should try if you like experimenting with flavors.


3 tablespoons olive oil

4 tablespoons onion, finely chopped

3 cloves garlic, chopped

2 tablespoons smoked herring with no bones

2 tablespoons sweet red wine

10 big green olives, pitted and quartered

3 tablespoons canned capers, rinsed

1 can or 1 and a half cup (270 gr) chopped tomatoes with its juice

1 table spoon tomato paste

black pepper

a pinch of sugar

Warm a heavy bottom skillet and add the oil. Add onions, garlic, smoked herring and pepper and fry for 5 minutes or until onions are tender and fish melts.

Add wine, fry for 2 minutes until alcohol evaporates and all flavors mix well.

Add tomatoes, olives, capers, tomato paste, sugar cover the skillet and simmer for 15 minutes.

Serve with tagliatelle, sprinkle with fresh parsley chopped, or grated Pamigiano Reggiano if you like.
