This sauce is used more as a dip and served with fried fish (anchovies in this case). Small fish like anchovies is usually underestimated, but the fact anchovies are rich in Omega 3 fatty acids make them a perfect dish for people that have heart problems. Clean them, wash the fish, slightly salt it. Pour some all purpose flour in a bowl and coat the fish. Fry in a heavy bottom skillet, using olive oil. Remember not to overload the skillet because if you put too many anchovies inside they are going to lower the temperature of the oil and the fish is not going to be crispy. Serve them with lemon and plain yogurt or make a sauce like this one.


1 cup yogurt

1/2 cup mayonnaise sauce 1/2 cup sour cream

2 teaspoons mustard

2 tablespoons olive tapenade or 1/2 cup black or green olives processed in the blender

2 tablespoons chopped parsley and some more to sprinkle on the top.

Put everything an a bowl. Mix well. Sprinkle some parsley and a pinch of cumin powder. Dip your fried fish in this sauce and enjoy a healthy and light snack or dinner.
