Homemade gnocchi is a wide known Italian homemade pasta recipe, boiled and served with pasta sauce. Gnocchi can be prepared in many ways. Kneating potato and all purpose flour, potato and corn flour. Spinach, pumpkin or cheeses can be added to the gnocchi dough in order to add color and flavors. Gnocchi can also become stuffed homemade pasta. Marmelade is mostly used in this case.

Gnocchi is usually boiled and served shortly fried in butter and served with grated cheese on the top. You can also serve them with your favorite pasta sauce on top. You could boil and place them in a baking pan add sauce for pasta, cheeses and make a very delicious gnocchi casserole. Use gnocchi to accompany goulash qnd other meat stews.

Remember when kneating gnocchi always use older potatoes. Cook potatoes in a boilig water or bake them in the owen. Place them in a blender or a food processor, to get a smooth puree. Also keep in mind that this dough is a bit sticky but do not work it for to long and do not add too much flour because this makes gnocchi to dense.

INGREDIENTS:

1 kilogram potatoes (old),

500 gr. all purposeflour

2 eggs

2 tablespoons butter, melted

also:a big pot with salted and boiling water to cook the gnocchi

Wash and peel of the skin of the potatoes. Boil them in salted water or bake them. Then press them with a fork. Use a food processor to make them smoother. Place the puree in a large bowl, add the butter, eggs and half of the flour. Mix by hand but do not work for a long time. Take from the flour you have left and dust the working area. Take a small peace of the dough roll it gently in to rolls and then cut small pieces (one inch long) with a knife. You can make stripes using a fork. Simply take one gnocchi and gently roll it over a fork. These stripes are useful in keeping the pasta sauce on the surface.

Put them on a surface dusted with flour.

Bring the water to a boil. Gently place several gnocchi inside and cook them until they start floating on the surface. Once cooked keep them in a warm place.

Put them in a skillet with some butter and Parmigiana and dried marjoram and serve them, or use your favorite spaghetti sauce .You can freeze the gnocchi once you boil them. Place them on a floured tray and put them in the freezer. When they are frozen place them in a freezer bag.
