What makes this dish different its the way its flavours and fat is mixed with the tomato and wine. It definitely tastes different then many meat sauces because onion and garlic and any juices are added after the meat is fried. Grape molasses gives a sweetness to the sauce but if you do not have it you try to cook with sweet red wine. Try it it is a sauce u can put on top of any form of pasta you like not only spaghetti.


1 package of spaghetti

For the meat sauce you will need:

300 gr. ground beef

1 slice of panceta (Italian bacon) diced

3 tablespoons olive oil

1 onion

1 clove garlic, chopped

1/2 cup wine

1 teaspoon grape molasses (petimezi). You can skip this ingredient if you can not find it.

1 and a half cup grated tomatoes

salt and white pepper ground to taste

1/2 teaspoon sweet or hot red paprika ground

1/2 cup freshly grated Parmigiana cheese

In a medium sized skillet put the meat and fry it, pressing it with a wooden spoon until it takes the form of crumbs and starts sticking to the bottom. Then add the pancetta and fry for 2 minutes. Add the onion and garlic, fry until their juices evaporate. Add the wine with the grape molasses and cook until the wine evaporates. Now add the oil, tomatoes, salt and pepper and paprika. Stir well. Simmer it covered for 20 minutes, until u get a thick meat sauce.

Prepare the spaghetti as it is remanded on the package. Serve some on a dish. Pour some of the meat sauce on top and put of the grated Parmigiana cheese on top. Enjoy!
