A good cook is the one that knows how to use the products he or she has to use and to prepare a good sauce from them. You do not need many ingredients to prepare a plain spaghetti sauce: fresh or canned tomatoes, garlic, onion, salt and pepper, some wine, and lots of love and imagination.

Just remember that if you use fresh tomatoes it would be best to pill their skin off. The best way to do that is to put them in a pot with boiling water and after 40 seconds to take tomatoes out and put them in a bowl with cold water and ice cubes.

This way it will be easy for you to pill off the skin from the tomato to cut it and take out the seeds. You do not have to do this if you put tomatoes in the food processor and chop them with the onion. Chop the onion. Smash the garlic cloves with your knife. Fry the onion and garlic and then add some wine, or add the tomatoes and you have a ready basic spaghetti sauce.

Now it is up to your taste, how much salt should you add? Black pepper? Tuna or another fish or sea food? Some olives finely chopped.

Some basil leafs?

Or meat. Grated or cut in small cubes? Veal, pork or chicken? Remember when you cook a spaghetti sauce with meat always cook it for a longer time because it can contain microorganisms and you would not want to put your health at risk.

You can make a sauce that does not contain tomatoes. You may like to try and eat your spaghetti or any kind of pasta with a white sauce on the top. It can consist milk, white wine, feta or any other white cheeses, parmesan or any other yellow cheese. Maybe some blue cheese? Or some yougurt sauce on the top of your gnocchi dish?

Your spaghetti sauce can contain only vegetables, so called vegetable sauce.

And finally always keep in mind that you have to fry carefully because hot oil can cause very bad burns on your hands. Safety comes first so you will be able to enjoy your homemade sauce served on the top of your favorite pasta.
