This is a combination of greek salad and pasta salad. It is an easy and fresh combination of vegetables and tuna fish that give flavor and light taste to cooked macaroni penne. This recipe uses penne rigate because this pasta is furrowed and it is easier for the macaroni to keep the sauce on the surface.

INGREDIENTS:

400 gr. of penne rigate (any other short and hollow pasta can be used)

2 cans (195 gr.) tuna fish in brine, drained

2 fresh tomatoes, sliced

3 spring onions, sliced

1 small onion, sliced

1 cucumber, seeded and cut on cubes

1/2 green lettuce, rinsed and chopped

1/2 cup feta cheese

1/2 cup black or green olives

plus:

3 tablespoons vinegar and 3 tablespoons of olive oil for the vinaigrette dressing.

Cook the pasta as recommended by the manufacturer. Mix all vegetables in a big bowl.Add the pasta.

Now take a small glass jar, pour olive and vinegar inside. Close the jar and shake well until you get a white emulsion.

Open the jar and rinse the vinaigrette over the salad. Mix well and sprinkle mashed feta cheese on the top.
