This is one pasta salad that can be served both ways: warm and cold. I prefer it cold during the hot summer days because is a light and complete meal and you can have serve it for lunch, dinner or just a snack. If you are a fun of zucchini try it!



2/3 of a cup (150 gr) cous cous

2 medium sized zucchini (up to 250 gr.both)

10 to 15 cherry tomatoes (200 gr)

6 green onions

half cup (200gr) feta or other white cheese

1 hand full of fresh parsley leafs

2 tablespoons red wine vinegar

4 tablespoons olive oil

salt, pepper

Wash the zucchini under running water, cut off its ends and cut them with the potato peeler. Try to make long stripes like tagliatelle.

Cook the cous cous as it is recommended on the package.Wash the tomatoes and cut them on four.Clean and wash the onions cut them on small rings.Mix all ingredients in a large salad bowl. Take the cheese and grate it in the bowl.

In a small bowl whisk the vinegar with the olive oil some salt and black pepper. Pour it in the salad mix well and serve!Or put it in the refrigerator for half and hour of you want to eat it cold.
