There are so many vegetables that can be used in the process of preparing a sauce for your pasta dish.

First of all you can use roar vegetables grated, sliced or cut. You can boil, bake or roast vegetables. Use whole parts of them, smash them, or blend them.

Vegetable sauce is a good place to ‘hide’ certain vegetables that your children refuse to eat. Just bled that vegetable and hide it in a nice tomato sauce served on top of spaghetti.

There are some sauce recipes that use lard or few slices of smoked bacon just to give better taste to the sauce. And many vegetable pasta sauces have some cheese in their ingredient list.

If you want to make a healthy pasta sauce that is going to be good for your heart and arteries try to fry onion and garlic in olive oil that behaves the best from all oils when heated. Try to use tomatoes, garlic, zucchini, broccoli and other vegetables that have fiber and less salt.

Other vegetables rich in fiber are artichokes, peas, sweet potatoes, turnip greens, Brussels sprouts, baked potatoes. Use light cream if needed. Add fresh herbs for better taste.

Vegetable sauce can be cooked in a pan and served on top of cooked pasta. Another way is to prepare the sauce and bake it or cook it together with the pasta.

There are many ways to list vegetables. According to the part people are using to cook they can be divided as follows:

SEEDS: corn, peas, beans

LEAVES: spinach, lettuce, fresh onion, garlic chives, celery, lemon grass

FLOWER BUD: broccoli

ROOTS: carrots, beets, radishes

BULBS: onions, shallots, garlic

FRUITS that we use as vegetables: tomato, zucchini, squash, pumpkin, peppers, eggplant, cucumber, avocado.

LEGUMES: green beans, soybean, lentils

No matter what way we choose to cook our vegetable sauce, the sauce we make must be made from fresh well cleaned, rinsed vegetables. In order to avoid microoganisms to multiply and release their toxines every sauce we prepare should not stay on room temperature longer then 2 hours. Refrigerate if you have not consumed the sauce untill then and bring to boil before you serve it again.

Spinach And Feta Sauce. One sauce recipe that is fast and delicious. It gives a nice greenish color to your pasta and children love it. It can be served on top of your pasta dish, it can be served as a dip with meat dishes or use it as a base for your pizza.
