Pumpkin Sauce For Pasta


This might look like a unusual sauce recipe for pasta, but we all know pumpkin matches well with cheeses. You are going to be surpsised with the special aroma and the change of sweetness and the taste of Parmesan cheese.


350 grams spaghetti, cooked

3 tablespoons olive oil

1 onion, finely chopped

800 grams yellow pumpkin flesh, grated

150 ml. vegetable stock

1/4 nutmeg powder

1/2 cup fresh parsley, chopped

100 grams Parmesan cheese, grated

100 ml. heavy cream

salt and pepper to taste

Saute the onion until it is tender. Pour the vegetable stock and add the pumpkin. Cook for 25 minutes, or until the pumpkin is soft and cooked. Add the rest of the ingredients and cook for 5 minutes. Add the spaghetti inside, stir well and serve warm. You could grate more Parmesan cheese on the top.
