Cheese Pie (Snail Shaped)
This cheese pie has a snail like shape, it usually is homemade, and the pie filling is made of goat cheese or any other white cheese.

On the Balkans there is a custom of celebrating the Old New Year that is on January 14th when counseling the Old Orthodox Cristian Calendar. It is celebrated in a small cafe or at home where friends gather together, have a few drinks, eat some snacks and play cards.
On midnight they welcome the New Year cutting the cheese pie that is baked with a coin inside. The pieces of pie are equal to the number of people gathered. The host or hostess is turning the pie around and each one is taking the piece of pie that stops in front of him/her.
Tradition says that the person that has found the coin will receive some money from the company and next year the pie and gathering is in his/hers place.

INGREDIENTS:

for the phyllo dough:

600 gr. all purpose flour
300 gr. lukewarm water
1 tablespoon oil
a pinch of salt
1 teaspoon vinegar

For the pie filling:

300 gr. goat cheese, crumbled and mixed with
2 eggs, beaten
and 1/4 teaspoon white ground pepper

plus 1/2 cup sunflower seed oil to sprinkle the phyllo sheets.

Mix all ingredients for the phyllo dough in a bowl and knead well. Cut the dough in 4 peaces, use a rolling pin to open each of this peaces into a round shaped sheet as big as a plate (1 to 1 and a half palm). Oil the surface of one plate then place one round sheet on it, brush it well with oil and continue like you are assembling a cake. One layer round shaped dough, oil on the top then dough again.
Cover it with another plate and leave it to rest for 30 minutes.

Now sprinkle some flour on the table take a peace of the round dough from the plate, place it on the table surface sprinkle more flour on the top and start opening the sheet using a rolling pin.
When you get a paper thin sheet put the rolling pin on the side and try to stretch the dough more with your hands. Cut off the ends if you can not make them very thin. Place 1/4 of the pie filling on one end, sprinkle the sheet with 2 tablespoons of oil and roll it. Take the roll and place it in the center of the baking pan trying to make snail like shape.

Then continue adding the rest of the phyllo sheets until the pan is filled.

Take one gold, silver or metal coin, wash it well and cover it with kitchen foil and place it inside the one of the pie sheets.

Sprinkle the rest of the oil on the top and bake the pie on 200 degrees Celsius for 45-50 minutes or until it is red and crispy.

Take it out from the oven, take some water in yer hand and sprinkle the pie, cover it for 15 minutes and it is ready to be cut and served. .

Tips:

Use 500 gr. package of frozen ready phyllo dough instead of homemade

Add only egg whites if you do not like the yellow color in your pie fillings.

You could use another pie filling instead of the traditional: spinach and cheese, yellow cheese and mozzarella cheese or ground meat and mushrooms.
