Tahini Pie

I often choose to bake tahini pies as snack pies for my children.. I believe that tahini is a good choice since it is a sesame seed paste and contains proteins, iron, calcium and is healthy.. Tahini pies are sweet because sugar or honey is added.
You can find tahini in Asian food stores or make a homemade tahini:

Put 3 cups of sesame seed in a skillet and stir on a medium heat until it turns golden. Do not add oil in the skillet and do not let sesame to turn brown. Leave the sesame to get cold then put it in a blender or food processor add 3/4 cup olive oil and blend. Add more olive oil if needed.
Keep it in a glass jar in a cold and dark closet, or in the refrigerator. If possible turn the jar upside down so you will avoid oil olive separate from the paste. Shake well before using.

INGREDIENTS for 8 pies:

500 gr. all purpose flour

250 ml. water, warm

2 tablespoons olive oil

1/2 teaspoon salt

1 teaspoon sugar

1 teaspoon dry yeast

1 teaspoon baking powder

you will also need:

8 tablespoons tahini

8 teaspoons  sugar or honey for the pie filling.

Step one : make the pie dough by hand. Mix everything in a bowl, knead until it forms a soft and elastic ball. Sprinkle some flour on the top (in order to avoid forming of crust while the dough is resting) cover the bowl with warm towel and leave it to rest for an hour.

Step two : uncover the bowl, knead for a minute and place the dough on a slightly floured surface. Take a knife and divide it into 8 small balls. Work each one with a plaster (sprinkling more flour on the surface so it will not stick) and make a small thin sheet with round shape. Spread one tablespoon tahini and sprinkle 1 teaspoon sugar or honey. Now roll the pie sheet and tie it like a knot.

Step three : Place the tahini pies on a baking pan covered with baking paper and bake them in a preheated oven on 180 degrees Celsius for 40 minutes.
