Nettle Pie

Nettle pie is the best way to celebrate spring and give some iron to our organism. If you can not find nettles you can always replace it with spinach.



3 tablespoons olive oil

200 gr. cooked nettles, chopped

2 leeks, finely chopped

1/2 bundle fresh dill chopped

1/2 teaspoon salt

1/2 teaspoon sweet red paprika

white pepper powder to taste

2 eggs

2 table spoons all purpose flour

300 gr. feta cheese


900 gr. all purpose flour

450 ml. warm water

a pinch of salt

Prepare the filling first..
Saute leek on olive oil. Add nettles, dill, salt, paprika and pepper. When fluids almost evaporate, place the skillet in a cold place. When it is almost cold, add eggs and feta cheese and the flour. Mix well and leave it aside to get cold.

Now prepare the dough.
Put all ingredients in a bowl and make a soft and compact ball. Work well with your hands, for 5 minutes. Then divide it in 4 balls, brush every dough ball with oil and leave it covered to rest for 20 minutes at least.

Take one ball, put it on a floured surface, sprinkle more flour on the top and start working with the rolling pin. Roll the dough into a round shape as big as a plate. Then start stretching the sheet with hands. Place one hand in the center and stretch with the other. Try to make a bog and transparent sheet. Cut it in two halves, place 1/4 of the filling, make it even with a fork, and roll. Take one roll and make turn it making a round or oval shape.
Place it in oiled baking pan.
You will get 8 atomic nettle pies.
Pour 1 table spoon of oil on top of each pie and bake it in preheated oven on 200 degrees Celsius for 30 minutes. Lower the temperature on 180 degrees Celsius and continue baking for 20 minutes, until pies are red and crispy.
Serve with homemade yogurt.
