Carrot Salad

Carrot is my children’s favorite treat. They love shredded carrots with balsamic vinegar on…they enjoy it as a carrot salad, and as a part of any other salad or cooked dish. This salad is using raw carrots, walnut and garlic and it is an easy, quick and cheap way to serve something different rather then the usual quick cucumber and tomato salad.

I believe this salad prepared with half clove garlic (or without it) when served to children is a nice way of introducing fresh vegetables and help them increase the daily intake of vitamin A and C.


2 cups shredded carrots, raw

2 tablespoons homemade mayonnaise

1 tablespoon lemon juice

1/2  cup walnuts

1 clove garlic

1/4 teaspoon Kosher salt

Place the carrots in a salad bowl, mix them well with the mayonnaise and lemon juice.
Cut the garlic clove in half lengthwise and remove the germ ( the small sprout inside the clove). Crush and grind the garlic using a mortar and pestle. The salt is going to help this process. Add the walnuts and crush them too. Do not grind the walnuts, you should feel them in the salad.
Add the garlic-walnuts mix in the salad. Stir well.
Try it and add more lemon juice if needed.
