CUCUMBER SOUP

I bet cucumber soup is something you never think of when you come to use this vegetable. Salad or slices inside a sandwich is the most usual ways to prepare the humble and so valuable cucumber. You may add some cucumbers when preparing a zucchini relish?

If you grow your own vegetables in a garden, I am sure there comes a day when you end up with lots of cucumbers on the table and you wonder what to do with it.
Try this vegetable soup recipe. It is warm, it is aromatic it is so good.
INGREDIENTS:
3 tablespoons olive oil
2 cucumbers (up to 400 gr.), if from your garden do not peel
1 big potato (100 gr.), peeled and chopped
5-6 leaves green Roman lettuce
5 spring onions, with the green part, sliced
500 gr. vegetable stock
salt and pepper to taste
plus:
1 spring onion, finely chopped
1 cucumber, diced
1 green pepper, diced
served in a bowl together with the soup
and a bowl with Creme Fresh plus pita bread  for dipping.
Warm the oil in a soup pot and saute the spring onions for severalminutes. Add the cucumber, potato, lettuce and fry for a while. Add the vegetable stock, stir well, bring the vegetables to a boil, then lower the temperature, cover the pot and simmer for half and hour.
Take a spoon and try the stock, add salt and pepper to taste.
Use a hand blender (stab mixer) to puree the vegetables.
Serve warm, sprinkle some of the raw vegetables.
Add a tablespoon of Creme Fresh if you like.
Tip: you can make this soup more interesting by adding a chopped and fried smoked bacon.
