Green lettuce soup is one healthy and light variation of vegetable soup meals. Green lettuce is abundant in spring time and contains iron, calcium,potassium, vitamin A and C. Is also rich in fiber.
If you have some green Romain lettuce in your refrigerator and you are wondering what to do with it, then this soup should be in your menu today .
Having some warm vegetable soup during the chilly spring evenings is the best you can do for your health.


3 tablespoons olive oil

3 spring onions, chopped

1/2 cup fresh parsley, chopped

1/2 cup fresh dill, chopped

1 carrot, chopped

2 medium sized potatoes, chopped

1 spring garlic,chopped (1 clove garlic is also fine)

3 heads green Romain lettuce, roughly chopped

3 cups (600 ml) warm water or vegetable stock

juice from 1 lemon

salt and pepper to taste

plus: some fresh dill and heavy cream or yogurt for serving

In a heavy bottom pot warm the olive oil and saute the onions until tender, 3 minutes approximately. Add the garlic, saute for a minute then add the lettuce, dill, parsley, carrot and potatoes. Stir well, add the water, lemon, cover the pot and cook on medium heat for 20 to 30 minutes.

Take the soup from the heat. Uncover the pot and use a stab mixer to puree and transform it into a veloute soup, or transfer it to a blender or a food processor.

Serve warm. Stir in a table spoon or two heavy cream or yogurt, sprinkle some fresh dill or spring onions and enjoy the green lettuce soup which I honestly hope is going to become a part of your menu.


You can add 2 tablespoons of balsamic vinegar instead of the lemon juice.

Although spring onions have a different taste you can replace them with 1 big onion if you want.

If you do not have Romain lettuce any type is fine to be used.
