Beef Potato Stew Recipe
INGREDIENTS for 6 servings:
500 grams beef, cut on large cubes
4 big potatoes. cut on six cubes
3 carrots, sliced
1 celery root, cleaned and cut on four
3 celery ribs, its leaves, whole
1/3 bundle fresh parsley, chopped
1 cup (200 ml) tomato juice
2 cups water
4 tablespoons olive oil
1 big onion, chopped
2 tablespoons salt
white pepper to taste
Use a heavy bottom pan and pour the oil inside, when it is hot add the peaces of meat and fry from all sides.
Add onion and fry for 3 minutes.
Then add tomato juice, water cover and simmer on medium heat for and hour.
Remove the cover and add potatoes, carrots, celery root and leaves, parsley, salt, pepper and when it starts boiling again, cover and cook for another hour.
Taste and add more oil or salt and pepper if needed. Enjoy!
