                                                        Peas And Sweet Corn Stew

One Mediterranean dish, with one ingredient that is usually not added- frozen sweet corn. My children did not like green peas so I thought this two ingredients would match and I was right. Now they eat it. Vegetables, herbs all cooked together in a tomato sauce and with the olive oil to bring all of the aromas together.


1 onion finely chopped

500 grams frozen peas

200 grams frozen sweet corn

1/3 bundle of fresh dill, chopped

2 carrots, diced

2 medium sized potatoes cut on large cubes

1/3 cup olive oil

1/2 can whole tomatoes in tomato juice, blended

2 cups water

1 teaspoon salt

black pepper to taste

In a large pot heat the oil, fry the onion then add peas, sweet corn, carrots, potatoes and fry for 5 minutes. Pour the tomato juice, water add the dill, salt, pepper, stir well, bring to a boil then lower the heat. Cover the pot and simmer for 60 minutes.

Serve with feta cheese.

Replace the frozen with fresh peas when available.
Blend fresh, ripe tomatoes if have.
Add fresh parsley if you do not like fresh dill.
You can exclude the frozen sweet corn .
